The tradition of the well-known Hussars of opening Champagne bottles with their sabres has survived to this day and the result of them is this new sabre design that incorporates a thousand-year-old olive wood handle made in Italy with a stainless-steel guard for protection. Laguiole en Aubrac - Sommelier sabre Lisse Origine Concorde - Sabrage

Sabrage is a special technique for opening champagne bottles with a sabre (sabre in French), usually used as a ceremonial gesture. The sabre is slid along the body of the bottle towards the neck with a sharp blow. The force of the blade striking the lip of the neck is sufficient to break the glass and separate the neck cleanly from the bottle collar which, together with the cork, is shot away by the force of the gas contained in the wine. When applied correctly, the technique is effective with any sparkling wine.

This practice became popular in Napoleonic France when the army visited the aristocratic domains belonging to the empire. The period was just after the French Revolution and the sabre was the weapon of choice for the army's light cavalry, the hussars. Given the numerous victories achieved by the army, there were many celebrations, during which it was customary to open the bottles by a convenient and easily available means. It seems that during one of these celebrations Napoleon himself said 'Champagne! In victory it is a merit; in defeat a necessity', thus encouraging its use and practice.
