In the late 1980s, Walter Fortunato designed and built the stopper sealing system that has made Waf famous throughout the world. The Block Waf System© still represents the most ingenious invention for preserving the precious characteristics of newly uncorked sparkling wines over time. The patent, applied in many items in the stoppers line, follows Pascal's principle that pressure exerted on a fluid is transmitted in all directions with equal intensity. By applying Pascal's principle to the bottle, the elastic teat goes to adhere to the inner wall of the mouthpiece. The head gasket with which the teat is fitted tends to rest against the top edge of the bottle, creating an initial obstacle to the escape of carbon dioxide. The carbon dioxide, again due to Pascal's principle, enters the teat through the hole below and as the pressure increases it goes to expand against the glass wall thus creating a state of overpressure inside. The external fixing bracket is designed to counteract the vertical thrust that the stopper receives and thus ensures its tightness, which has been tested up to 6 atmospheres.

Organoleptic analysis: the wine poured into the glass through the glass decanter, with its characteristic amphora shape, "centellino" is recognised as different from the wine poured directly into the glass at a 95% confidence level by a panel of 6 expert tasters subjected to a trianolar test. Wine passed through centellino is described as "more open, cleaner, more harmonious". People have been talking about the centello, or ciantello, or centellino, since ancient times.

HOW TO USE THE TILT

Apply the Tilt to the neck of your bottle and pour by adjusting the tilt according to how much you want to oxygenate your wine. Once poured, remove the Tilt and sip in relaxation.

OXYGENATE IN THE RIGHT WAY 

Correct aeration of the wine softens the tannins and allows the aromas to be enhanced.

Every wine needs the correct amount of oxygen to be able to express its full potential. Generally speaking, the rule applies that an ageing wine that is still young needs more oxygenation in order to be able to release all its aromas to the full; an aged wine, on the other hand, needs to be oxygenated more gently so that it retains the residual fruity notes and vigour that it has withstood the ageing process.

Laboratory Notes:

Organoleptic analysis: the wine poured into the glass through the glass decanter, with its characteristic amphora shape, "centellino" is recognised as different from the wine poured directly into the glass at a 95% confidence level by a panel of 6 expert tasters subjected to a trianolar test. Wine passed through centellino is described as "more open, cleaner, more harmonious". People have been talking about the centello, or ciantello, or centellino, since ancient times. The Latins called it cyatulus, diminutive of cyatus, from the Greek Kyathos from Kyo 'to pour'. An object with which precious and ancient ambrosias and spirits were poured.
