Scimitar "or" French "blade already present in the early twentieth century, production continued until the mid-1950s. The great success of this model, which was born in Scarperia has had national diffusion, is due to the fact that although it is very light it is elegant, robust and has great cutting capacity, due to the guessed shape of the blade. It is characterized by the presence of a metal "button" on the heel and a clamp at the other end of the handle.

More or less fifty years have passed since the time of the Pasinetti Fund. This was the name of the place in via Magenta, in the center of Scarperia, where the Consiglio brothers opened their business.
Luigi, then in his early twenties, and Enrico, a few years younger, had already dedicated themselves to the production of knives for several years but under the owner, as they used to say then, in the same company in which their father, from the earliest years in the twentieth century it was dedicated to the forging and production of pattada knives and grafting knives.
In the middle of the last century, while the young people were leaving the splendid but miserly landscapes of the green Mugello to look for better opportunities in nearby Florence, the Consiglio brothers and their friend Marcello Azzini joined their forces and the first letters of their surnames giving life at Conaz. The Pasinetti fund, with a forge, a hand-held balance wheel to cut steel and even a coal-fired oven to temper, was their first theater.
Around the mid-1960s, Conaz began to differentiate production in order to meet the substantial demands from the Sardinian market.
On the one hand, robust and practical knives (with revolutionary finishes for the time) and on the other hand very valuable models, such as the pattada in polished horn with mirror polished blade, which was obtained by mixing glue and very fine emery (with a operation called loading the wheel). Already then, while the new trend generated by the boom in plastics was being followed, a way of making knives was carefully preserved that was understood to be disappearing and therefore needed to be jealously guarded.
The polished horn was the hallmark of superior quality; to shape the horn, fire began to be used instead of paraffin, thus obtaining a compacting effect on the layers that make it up and reducing the possibility of flaking which is at the origin of the defects of the handles.
Years went by; the air tempera, obtained by spreading the blades on the cold floor, gave way to oil tempera, more practical and more accurate.
The ancient working methods were handed down carefully but with a limited number of models.
The awakening of interest in the most authentic roots of the ancient art of cutting tools, gave the Conaz artisans the push to extend their repertoire by drawing heavily on the most lively Scarperian tradition. The Florentine, the Sienese, the Maremma, the Rasolino, the models that made them famous and that today are the pride of many enthusiasts and collectors, were now a reality.
Currently, alongside the production of typical Italian models, a perfect synthesis of tradition, technique, elegance and refinement, there is also finely finished table and kitchen cutlery that uses noble materials such as bovine horn, buffalo horn and olive. The total commitment of the Consigli family is aimed at enhancing the craftsmanship, maintaining the values of manual skills and tradition and the continuous work of spreading the elements that can make these objects appreciated. Today that Luigi Consigli has reached his well-deserved retirement, Enrico is joined by his children Elena and Pietro. They are entrusted with the task of safeguarding the family's centuries-old artisan tradition to give new impetus to the ideals from which, half a century ago, in the Pasinetti fund, Conaz was born.
