Nel 1884 Karl Elsener inaugura la propria officina di coltelleria nel ridente borgo di Ibach, nelle Alpi svizzere. Grazie al coltello da tasca per soldati, seguito dal celeberrimo coltello per ufficiali ''Swiss Army Knife'' depositato nel 1897, diventa rapidamente fornitore ufficiale dell'Esercito Svizzero. Nel 1909, in omaggio alla madre, battezza la fabbrica con il nome ''Victoria''. Nel 1921, con l'invenzione dell’acciaio inossidabile (Inox), modifica la denominazione dell'azienda familiare che, da allora, si chiamera' Victorinox.
Oggi, l'azienda Victorinox è diretta da Carl Elsener e dal figlio Carl Elsener Junior, impiega un migliaio di collaboratori e produce ogni anno 25 milioni di coltelli, distribuiti in un centinaio di paesi.
