Each piece is unique and from wood to mammoth ivory there is hardly any limit to the exclusivity of the materials.     The simple rectangular acacia wood board has a groove and a cutting wire with a stainless steel bracket.

  5. Laguiole en Aubrac - gray cedar wood sommelier saber - Sabrage

    The Sabrage is a special technique to open champagne bottles with a saber (sabre in French), usually used as ceremonial. The saber is slid along the bottle body towards the neck with a dry shot. The force of the blade that strikes the lip of the neck is sufficient to break the glass and separate the neck neck from the bottle collar which, together with the cap, is fired away by the force of the gas contained in the wine. If applied correctly, the technique is effective with any sparkling wine.

    This practice became popular in Napoleonic France when the army visited the aristocratic domains of the empire. The period was shortly after the French Revolution and the saber was the army's light cavalry election weapon, the ussari. Given the many victories the army had received, there were many festivals during which it was easy to open the bottles with a comfortable and easy-to-reach medium. It seems that during one of these celebrations Napoleon himself said "Champagne! Victory is a merit; defeating a need ", thus encouraging its use and practice.

    Laguiole en Aubrac - Sommelier sabre Lisse Origine Concorde - Sabrage

    Sabrage is a special technique for opening champagne bottles with a sabre (sabre in French), usually used as a ceremonial gesture. The sabre is slid along the body of the bottle towards the neck with a sharp blow. The force of the blade striking the lip of the neck is sufficient to break the glass and separate the neck cleanly from the bottle collar which, together with the cork, is shot away by the force of the gas contained in the wine. When applied correctly, the technique is effective with any sparkling wine.

    This practice became popular in Napoleonic France when the army visited the aristocratic domains belonging to the empire. The period was just after the French Revolution and the sabre was the weapon of choice for the army's light cavalry, the hussars. Given the numerous victories achieved by the army, there were many celebrations, during which it was customary to open the bottles by a convenient and easily available means. It seems that during one of these celebrations Napoleon himself said 'Champagne! In victory it is a merit; in defeat a necessity', thus encouraging its use and practice.

    Laguiole, which can be defined as the "capital" of the Aubrac, is a small town of about 900 inhabitants that became known all over the world for the traditional Laguiole knife.

    The Laguiole knife, also known as a knife-corkscrew, loved by the best sommeliers in the world, is said to have evolved from the one used daily by the people of the region since the fourteenth century. It is said that they received it from their parents on the occasion of the First Communion, and used it with love for life as a friend, and as an "amulet".

    The Laguiole knife refers to an older model called capuchadou, which the Aubrac breeders used every day since the fourteenth century. The farmers brought it with them, hung on their belts and used it to work wood, or to cut bread and cheese. It is said that, at the end of the working day, they put it on the ground, like a cross, to offer their evening prayer.

    The current Laguiole knife, has its prototype in the one designed by Pierre-Jean Calmels, at the beginning of the nineteenth century. At the time, many Catalans lived in this region, used for deforestation or other jobs. They used a clasp knife, a curved blade called a navaja, and Calmels created a beautiful and functional instrument, fusing the traditional navaja and Laguiole knife, heir to the capuchadou. Still today, keeping the tradition, each Laguiole En Aubrac knife is handcrafted by Laguiole's artisans.

    Laguiole, which can be defined as the "capital" of the Aubrac, is a small town of about 900 inhabitants that became known all over the world for the traditional Laguiole knife.

    The Laguiole knife, also known as a knife-corkscrew, loved by the best sommeliers in the world, is said to have evolved from the one used daily by the people of the region since the fourteenth century. It is said that they received it from their parents on the occasion of the First Communion, and used it with love for life as a friend, and as an "amulet".

    The Laguiole knife refers to an older model called capuchadou, which the Aubrac breeders used every day since the fourteenth century. The farmers brought it with them, hung on their belts and used it to work wood, or to cut bread and cheese. It is said that, at the end of the working day, they put it on the ground, like a cross, to offer their evening prayer.

    The current Laguiole knife, has its prototype in the one designed by Pierre-Jean Calmels, at the beginning of the nineteenth century. At the time, many Catalans lived in this region, used for deforestation or other jobs. They used a clasp knife, a curved blade called a navaja, and Calmels created a beautiful and functional instrument, fusing the traditional navaja and Laguiole knife, heir to the capuchadou. Still today, keeping the tradition, each Laguiole En Aubrac knife is handcrafted by Laguiole's artisans.
