    Come è tipico per molti attrezzi agricoli, anche questo coltello giapponese risulta estremamente semplice ma frutto di un secolare perfezionamento che ha trovato il difficile punto di equilibrio tra forma e funzione, e tra costo e beneficio.

    La caratteristica principale risulta sicuramente la qualità della lama, infatti utilizza un acciaio San Mai a tre strati di cui quello al centro durissimo.

    Ha un filo a rasoio, come si conviene per un attrezzo nato per tagliare e non solo per essere esposto in vetrinette.
