Corzetti or Croxetti are a flat, coin-like pasta species from Liguria. For the production, a two-piece stamping tool is needed, which is traditionally made of wood and carved. Today, there are only a few woodcarvers that produce the shapes of typical regional noodles.
The stamp marks patterns on the pasta, usually on both sides. The surface structure is not just decoration, it helps to ensure that the sauce sticks better. The pasta style dates back to the Middle Ages. In the past, noble families had their family coat of arms stamped in their pasta and were thus able to serve both individual and representative noodles. She had incorporated her visual identity with pasta, as it were. Other typical symbols are the cross, fruits, initials, mortars, sunsets, sailboats or palm trees.

The dough is prepared, then the dough, then cut into circles on which the stencil is printed.
Once done, they are left to dry a little on the sideboard and then cooked.
They are excellent seasoned with walnut sauce, mushroom sauce (Tocco de funzi) and also with pesto. They can also be served with butter or oil and herbs.
In Levante Ligure it is customary to season them also with pine nut sauce.
