The innovative idea was born in creating a mix of equipment that could allow for perfectly finished tarts. The stainless steel microperforated band by Pavoni is the flagship product of this project. The presence of the microholes allows the edges of the pie to be supported, preventing the edges from collapsing during baking and optimal browning of the bottoms.
