La presenza dei microfori permette di sostenere i bordi della torta evitando il collasso dei bordi in cottura e una doratura ottimale dei fondi. From an idea of 2007 by Fabrice David, Pavoni and the master Gianluca Fusto have been able to develop a system to easily realize tarts impeccable to the palate and to the sight.
The innovative idea was born to create a mix of equipments that can allow to obtain perfect finished tarts.
The stainless steel microperforated band by Pavoni is the leading product of this project. The presence of microholes allows to support the edges of the pie avoiding the collapse of the edges during cooking and an optimal browning of the bottoms.
Today the line Progetto Crostate by Gianluca Fusto is enriched, a perfect mix of equipments able to realize tarts with impeccable taste and sight. Many new shapes and sizes for single tarts: heart, circle and oval, triangle, rectangle and square.
A wide mix of micro-perforated strips for impeccable baking of the pastry and full strips for perfectly compatible layers and inserts.
