    AZIENDA DEMEYERE

    L’azienda belga Demeyere, fondata nel 1908, produce utensili da cucina in acciaio inossidabile utilizzati dagli chef (professionisti e non) di tutto il mondo. Le parole chiave di Demeyere sono: specializzazione produttiva, qualità, confort, design, sicurezza e durata.

    Ogni linea di prodotto nasce da un’attenta ricerca e da una tecnica produttiva specifica. Per chi predilige una cucina sana e “divertente”.

    L’affumicatore Demeyere è ideale per ogni tipo di pesce, carne e verdura e, grazie alla sua versatilità, si può utilizzare come cuoci-vapore, per le verdure ed altri prodotti.

    Si può lavare in lavastoviglie ed è pratico. E’ adatto per tutti i tipi di cucina, induzione inclusa.

    La caratteristica principale dell’affumicatore Demeyere sono i trucioli (venduti in confezione, separatemente) realizzati in legno di faggio aromatico.

    AFFUMICARE


    Per dare più sapore agli alimenti, senza l'utilizzo di grassi, sale ed olio, li si può affumicare.

    E' un metodo sano e povero di calorie.

    Distinguiamo due modi di affumicare, a caldo e a freddo.

    L'affumicatura a freddo è realizzata ad una temperatura inferiore a 30°C e può durare molto a lungo (da 3 a 20 ore).

    L'affumicatura a caldo è realizzata ad una temperatura compresa tra 60°C e 80°C e permette un'affumicatura lenta che dà un prodotto molto saporito. Il processo di affumicatura consente di dare alla carne, al pollame, al pesce, ai frutti di mare, ai formaggi (mozzarella, ricotta, scamorza, provola) e alle verdure sapori inconfondibili senza usare grassi, sale e olio.

    L’affumicatura a caldo richiede una temperatura compresa tra i 60° e gli 80°. Gli alimenti, esposti al fumo di legno aromatico (faggio, frassino, quercia, ginepro, rosmarino, alloro, castagno…), esaltano i loro sapori.


    Lo smoking set della Demeyere è versatile e può essere utilizzato anche per la cottura a vapore. La pentola ha un diametro di 28 cm. e può essere lavata in lavastoviglie. I trucioli di legno forniti dalla Demeyere sono di faggio.

    Istruzioni d’uso

    La pentola per affumicare Demeyere permette di affumicare a caldo. E' perfetta per ogni tipo di pesce, di carne e di verdura. Grazie alla sua versatilità, questo set per affumicare può anche essere utilizzato come cuoci-vapore per le verdure ed altri prodotti.

    Può essere messo in lavastoviglie, è pratico ed è adatto a tutti i tipi di cucine, induzione inclusa.

    Con il set per affumicare Demeyere l'affumicatura si fa in 4 tappe:

    Per prima cosa scaldare la pentola ad alta temperatura. Dopo alcuni minuti, versare alcune gocce d’acqua nella pentola utilizzando una forchetta. Se le goccioline toccando la superficie si trasformano in piccole sfere, abbiamo raggiunto la giusta temperatura.

    A questo punto ridurre la fonte di calore di circa il 50%. Spargere due cucchiai da cucina di trucioli di legno nella pentola. Per prima cosa riscaldare la padella a fuoco vivo.

    Dopo alcuni minuti, prendere una forchetta e far cadere alcune gocce d'acqua nella padella. La temperatura ideale è raggiunta quando le gocce si restringono e iniziano a bollire.

    Quindi va ridotta l'intensità circa del 50% e vanno versati due cucchiai di segatura. Depositare il piatto per affumicare nella padella, sopra la segatura. Il piatto per affumicare funge anche da protezione contro eventuali fuoriuscite. Lateralmente sono stati fatti dei fori per lasciar passare il fumo.

    Mettere la griglia nella padella. I prodotti alimentari saranno affumicati su questa griglia. Ridurre di nuovo l'intensità della temperatura fino al minimo. Infine, mettere

    il coperchio sulla padella.
