Sabrage is a special technique of opening champagne bottles with a saber, usually used ceremonially. The saber is slid down the body of the bottle toward the neck with a sharp blow. The force hitting the lip of the neck is enough to break the glass and cleanly separate the neck from the bottle collar, which, along with the cork, is shot away by the force of the gas contained in the wine.

From the magic of the saber, with its particular linearity and refined design embellishing the hilt, Perlage is a reference to the Napoleonic swords used by the Hussars, light cavalry of the Grande Armeè in the service of Napoleon.

From here, the tradition draws on their custom, upon victory achieved, of sabering bottles of champagne and toasting to life.

The first three are related to natural elements, so I developed characters that could personify them, each of them originating from the same shape inspired by the lotus flower, a symbol of 'rebirth', carrying the visual characteristics of its element. The other pair of bottles tell a story in which the impossible bond between a mermaid and a sailor is strengthened by the distance that separates them and the very nature that holds them in each other's element.

A bit of champagne history: It's funny how champagne was discovered by a French Benedictine monk named Pierre Perignon (1638-1715).

It was actually not a discovery but an accident. Pierre decided to save some wines that didn't really handle the fermentation process properly. After the winter, those improperly fermented wines began to react later in the spring and produce carbon dioxide trapped in the bottles. Most of the bottles exploded as the chemical reaction doubled the pressure. One morning, Pierre Perignon was surprised by this and found a bottle that resisted the pressure. That was the day of the dawn of a great and spectacular wine that captures everyone's taste. Champagne was named after a specific region in France when it was first discovered and marketed.

Today, you will find champagne whenever there are occasions and celebrations including, graduation day, wedding day, promotions, work or company anniversaries, holidays, thanksgiving, Christmas, New Year's celebration or holiday, birthday and many more.

Champagne is also used to celebrate achievements or triumphs such as in sport and competition. One can see how runners enjoy and capture the moment of victory as they open the cork of a bottle of champagne. The champagne is served in a champagne flute, a special thin glass which is specially designed of champagne. The glass cone helps to contain the bubbles allowing you to enjoy your glass of champagne to the fullest. The older you get the better it is with wine but not with champagne. Remember that colder champagne tastes better but should not be served chilled.

Blade and bottle opener

The 6 cm long blade with guide notch has a round, one-sided serrated cutter and a bottle opener. The back of the blade is guilloched by the cutlery maker.

Corkscrew

Its 6 cm long worm (important detail for extra long corks of great wines) with 5 turns of a conical shape facilitates the penetration of the cork without breaking it. It is made of a special steel with high hardness and flexibility.

The lever

The balanced lever/load ratio makes it easy to open the bottle. The hooking pin is easily stabilised on the bottle neck. The leverage is of course in one step. Do not hesitate to take advantage of the engraving offered to personalize it with initials or first name on the back of the lever.

Laguiole en Aubrac - Sommelier sabre Lisse Origine Concorde - Sabrage

Sabrage is a special technique for opening champagne bottles with a sabre (sabre in French), usually used as a ceremonial gesture. The sabre is slid along the body of the bottle towards the neck with a sharp blow. The force of the blade striking the lip of the neck is sufficient to break the glass and separate the neck cleanly from the bottle collar which, together with the cork, is shot away by the force of the gas contained in the wine. When applied correctly, the technique is effective with any sparkling wine.

This practice became popular in Napoleonic France when the army visited the aristocratic domains belonging to the empire. The period was just after the French Revolution and the sabre was the weapon of choice for the army's light cavalry, the hussars. Given the numerous victories achieved by the army, there were many celebrations, during which it was customary to open the bottles by a convenient and easily available means. It seems that during one of these celebrations Napoleon himself said 'Champagne! In victory it is a merit; in defeat a necessity', thus encouraging its use and practice.
