    Sabrage is a special technique of opening champagne bottles with a saber, usually used ceremonially. The saber is slid down the body of the bottle toward the neck with a sharp blow. The force hitting the lip of the neck is enough to break the glass and cleanly separate the neck from the bottle collar, which, along with the cork, is shot away by the force of the gas contained in the wine.

    From the magic of the saber, with its particular linearity and refined design embellishing the hilt, Perlage is a reference to the Napoleonic swords used by the Hussars, light cavalry of the Grande Armeè in the service of Napoleon.

    From here, the tradition draws on their custom, upon victory achieved, of sabering bottles of champagne and toasting to life.
