    Ceramic Vegetable Peeler -The ceramic vegetable peeler is a lightweight accessory. It can be used with either the right or left hand. The blade is made of Xirconia, a material almost as hard as diamond. That is why the blade has an extremely sharp edge, is precise and well finished. With this blade you can peel fruit and vegetables easily, without exerting too much pressure and very quickly. The ceramic blade is flavour-neutral.

    We recommend washing the vegetable peeler after use, to prevent the ceramic blade from discolouring.

    Called ISHI BA, which has the appearance of a vitreous stone, made using zirconium (a mineral similar to obsidian and flint) enriched with elements such as, magnesium, calcium and silicon (which act as a binder during the solidification process at temperatures between 1500 and 1700 degrees) in order to make it also elastic and robust, therefore suitable for making knives for everyday use. This particular material, also called 'advanced ceramics', is used today for many applications; from motors to chip holders, from bone prostheses to watch cases, from precious stones to knives.

    KEEPS THE THREAD 

    It cuts immutably day after day and keeps its edge longer than any metal knife. Laboratory tests show that, by applying an equal amount of pressure of 2.2 kg, the ceramic blade of ISHI BA can cut twenty sheets of paper at the same time for more than a thousand times without losing its sharpness. Good quality stainless steel knives lose their edge after cutting an ever decreasing number of sheets six hundred times.

    DOES NOT TRANSPORT FLAVOURS

    ISHI BA is a special knife also because it does not carry tastes and smells and being made of inert material, it does not cause chemical reactions with the elements, thus avoiding unpleasant tastes. It does not rust, it does not deteriorate because it has no oxidisable parts, it is hygienic, and it is easily washed by running it under water.

What is the best cutting board to protect knives?

The best materials are natural wood (which "absorbs" the cut) and composite materials made of wood fiber and resin, hygienic and gentle on the edge. Always avoid glass, marble, or granite: they irreversibly ruin the blade.

How often should kitchen knives be sharpened?

For home use, the edge should be regularly refreshed with a honing steel or strop. A complete resharpening on a stone or Horl system is recommended every 3–6 months, depending on the frequency and type of use.
