    Kai, industria giapponese partner di Kershaw Knives, ha introdotto sul mercato Shun, una serie di coltelli da cucina adatti agli amanti ed ai collezionisti.

    Forgiati da una lamina di acciaio inossidabile VG-10 ripiegata e ritorta per 32 volte, fino a creare il tipico disegno damasco su entrambe le facce della lama. Il coltello ha così eccellenti capacità di taglio a rasoio, penetrazione e tenuta del filo ineguagliate su qualsiasi altra lama in acciaio.

    This is the most commonly used knife in Chinese kitchens because it is suitable for a wide variety of preparations, slicing, chopping, filleting and even being used as a spatula to scoop up prepared food.

    It can easily be confused with a cleaver but although the shape of the blade is similar, the thickness and its use changes.

    The Chinese chef's knife has a much thinner blade than a cleaver and cannot be used to break bones.
