BEFORE USING THE KNIFE, READ THESE INSTRUCTIONS CAREFULLY AND KEEP THEM

This knife will work for several years without any problems if:
    • Removes it from the knife holder or drawer
    • Uses it for straight cuts to be made on a cutting board
    • Washes and dries it
    • Puts it back into the knife holder or drawer after use

    USE
Ideal for cutting boneless fruit, vegetables and meats
The term vegetables and fruit is generic: not all types of fruit or vegetables that are not recommended can be listed, but it is strictly not recommended to use them on dutra fruit and vegetables (pumpkin, coconuts, etc.)
Always use a plastic or wooden cutting board; avoid cutting on marble, stone, plates or tiles To chop, separate and de-bone, as well as to cut hard, frozen foods, bread with crust and cheeses, you always use your traditional steel knives. These types of cuts require bending and twisting and, for this reason, it is better to use a more flexible material than ceramic.
For its protection, the tip and base of the blade are not sharp

    CLEANING
Hand wash with water and dish soap.
Kyocera ceramic knives with plastic handles are dishwasher safe. They should be placed in the compartment dedicated to ladles and small accessories in the upper basket, avoiding contact with other metal utensils. Kyocera ceramic knives with wooden handles are not dishwasher safe.
If discoloration occurs that does not go away with normal cleaning, wash the blade (not the handle) with a mild bleach solution.

    TO AVOID
Do not drop on hard surfaces.
Do not use the tip as a pivot point, the sharp end could penetrate the cutting board, get stuck and break Do not expose the blade to direct flame (ceramic is a heat conductor). Do not use the side of the blade to crush garlic or other foods.

    STORAGE
You place it in a knife holder, sheath or drawer. When placing or removing the knife from the holder, be careful not to damage the tip of the blade.

    USURY
Over time, all knives lose their sharpness. A soft metal (stainless steel) blade "slips" when it loses its sharpness. Harder metals (such as carbon steel) stay sharp longer, but lose sharpness differently. Harder materials, instead of "slipping", tend to chip slightly.
In the beginning, the ceramic is sharper - and stays sharp for longer. Over time, small incisions may occur on the lo of the blade. This is the normal process whereby all hard material blades lose their sharpness.
Despite their appearance, the existence of small incisions does not necessarily mean that the knife is not sharp. You may find that it works flawlessly over an extended period of time.
When the performance of the knife is no longer the desired one, the Kyocera sharpening process will ensure that your knife returns to having a well-sharpened blade.
It is possible that deeper cuts and a broken tip can be resolved thanks to the new sharpening.

  36. Takefu Village - Takobiki Knife 260mm by Mr. Masanobu Okada - F-276R - kitchen knife

Takefu Knives Village is a brand born in 1991 in Echizen Fukui, a city in Japan famous since 1400 for the production of knives.
The Takefu knives brand is based on the union of 10 local artisans who make each knife by hand.

The model presented is made by:

    Mr. Masanobu Okada
Born in the city of Echizen in 1949, the third generation of forging artisans, he is one of the few living heirs of the "masaoki-ho" typical of Echizen, a forging technique that consists in hammering and folding the steel giving it a rhomboid shape for get a thinner, sharper and easier to sharpen steel sheet.

Initially specialized in the production of agricultural tools with the Monjiro brand, in recent times he began to produce artisanal kitchen knives with the traditional "uchi-hamono" technique, also receiving the title of Dentoukougeishi (traditional craftsman) after having undergone the strict examinations of the commission of the Traditional Crafts Industry Promotion Association Foundation.

The uchi-hamono technique (uchi means blow and hamono means cutting tool) finds its origins towards the end of the 1300s, in the Muromachi period and consists of manually beating with a hammer and repeatedly a heated steel sheet until a blade of cut. Many tools made with this particular method are still on permanent display at the MoMA (Museum of Modern Art) in New York.

In a recent interview Mr. Okada said: "I have been engaged with this art for over 45 years, but still today I still think that it is an infinite world where the notions learned never become obsolete and for this I feel I have to transmit them. to the younger generations ". Currently, under his careful guidance, two apprentices are thoroughly learning the blade polishing techniques.

    Maintenance:
Considering the high carbon steel used for the blade and the extreme construction quality of these knives, we recommend a series of attentions to be followed to maintain the quality of the product over time.

    - Never put the knife in the dishwasher
    - Rinse the knife with hot water before first use
    - Rinse the knife immediately after each use without aggressive dishwashing detergent and dry with a soft cloth (always starting at the back of the cutting edge)
    - Aggressive foods such as lemon juice must be promptly rinsed immediately after use
    - Do not use glass or granite plates as a cutting support. Use only wooden bases
    - Pay attention that the cutting edge of the knife does not come into contact with other metal objects during its storage to avoid damage to the cutting edge.

  37. Wusthof Germany - Performer - Cook's knife 20 cm - 1061200120 - kitchen knife

Black, sharp and unsurpassed, a series with a unique design that meets pure dynamism.
The WÜSTHOF Performer Knife series proves its worth with every use: exceptional quality for very high performance. The ultra-hard blade, coated in diamond-like carbon (DLC) guarantees low friction and perfect sliding of the blade during cutting. The non-slip honeycomb structure of the Hexagon Power Grip guarantees extreme control. This knife will win you over for a lifetime!

The cut of the Performer knives flows through the food with almost no friction. Thanks to the particularly low friction, the non-stick properties of the diamond-like coating and the lotus effect of the black surface, the particles simply roll off the blade. Freshly cut pieces of food, such as slices of an onion, slip away: an ideal situation when speed and precision are required in moments of intense activity in the kitchen.

Thanks to the hydrophobic effect, all liquids flow away, including citrus acids, as well as fats or starches from potatoes.
The DLC was originally employed for the extreme conditions of space travel and motorsports; WÜSTHOF is the first knife manufacturer in the world to use this technology on a fully forged knife.
    USE: vegetables, meat, fish
    FEATURES:

    - Diamond-like carbon coating increases surface hardness to 104 Rockwells
    - Thanks to this coating, the knife glides effortlessly through the food
    - Newly developed Hexagon Power Grip with anti-slip honeycomb structure
    - Forged from a single piece of WÜSTHOF stainless steel
    - Forged in Solingen, Germany
    DIMENSIONS:

    - Blade length 20 cm
    - Total length 34 cm
    - Weight: 257 gr.

Diamond-like carbon coated blade for extreme performance.

The diamond-like carbon (DLC) coated blade, being extremely hard and durable, is the highest quality in the knife market. The almost magical black coating increases the surface hardness of WÜSTHOF steel from 58 to a unique 104 Rockwell.

For connoisseurs, this means a significant benefit in terms of performance: its extreme robustness makes it practically immune to adverse external effects and the diamond surface is also extremely heat resistant.

The DLC was originally developed for the extreme conditions of space travel and motorsports; WÜSTHOF is the first knife manufacturer in the world to use this technology on a fully forged knife with holder.

Tim Malzer - Premier Kai Shun Minamo Series

With its flawless elegance, the Shun Minamo series joins the ranks of Kai's Premier Class series. An artistic combination of different cultures brought together by Tim Malzer's idea of creating the perfect synthesis between the European chef's knife and the Japanese santoku.

This fusion is at the base of the three blades that make up the Minamo series, designed with a clear stylistic idiom.

The unique combination of dark wood grain combined with the damask steel pattern gives each single knife a unique and unrepeatable look.

The name of the series derives from the patter of the damask used for these spectacular blades that recalls the rippled surface of the water plowed by the rain (in Japanese, Minamo).
