Chocolate and artistic sugar are two passions, I would almost say two diseases. Chocolate is the one with the most commercial implications. But artistic sugar is also growing a lot recently, and it gives me great satisfaction." Italian pastry champion in 2010, Emmanuele Forcone was runner-up at the Coupe du Monde de la Patisserie in 2011.
Executive pastry chef of the Pannamore pastry shop in Vasto, he has been to Australia several times to bring the Italian pastry art to the world, and over the years has specialised in chocolate and artistic sugar.
In 2015, he took the top podium at the Coupe du Monde de la Patisserie in Lyon, and has since been working assiduously with Pavoni Italia on several lines, including "le torte di Emmanuele" "TuttiFrutti" and the new colour range.

THE TART BECOMES A WORK OF ART
From an idea in 2007 by Fabrice David, Pavoni and master baker Gianluca Fusto were able to devise a system to easily make tarts that are impeccable to the palate and to the eye. The innovative idea was born in creating a mix of equipment that could allow for perfectly finished tarts. The stainless steel microperforated band by Pavoni is the flagship product of this project. The presence of the microholes allows the edges of the pie to be supported, preventing the edges from collapsing during baking and optimal browning of the bottoms.

How do you make healthy snacks with Veggie Snacks?
For the perfect chips, soak or hydrate your raw pulses for the recommended time.
You can also use cooked pulses.
Mix your pulses with raw potato to make the mixture.
Follow the instructions in the table in the product leaflet included.
Add your preferred seasoning for more flavour, or simply follow one of our recipes.
Spread the mixture over the holes in the mould using a spatula.
Lift the top part and remove.
Cook in the microwave, without the top, at 800W for the time indicated in the table.
Open the microwave door after 3-4 minutes to allow any accumulated steam to escape.
Leave to stand for 1 minute, then remove the chips.
Repeat the process as many times as you like and enjoy a batch of high protein snacks for the next few days!

From an idea of 2007 by Fabrice David, Pavoni and the master Gianluca Fusto have been able to develop a system to easily realize tarts impeccable to the palate and to the sight. The innovative idea was born to create a mix of equipments that can allow to obtain perfect finished tarts. The stainless steel microperforated band by Pavoni is the leading product of this project. The presence of microholes allows to support the edges of the pie avoiding the collapse of the edges during cooking and an optimal browning of the bottoms.

The concept starts with the creation of a mix of equipment to allow the chef to obtain tarts with perfect finishing; the key product of this system are the micro perforated stainless steel frames: the micro holes let the shortcrust pastry to hang onto the frame, avoiding the border collapsing during baking and a perfect browning of the basis.
