    Kai Europe celebrates its 11 years of collaboration with master-chef Tim Mälzer with this exclusive Kai Shun Premium Tim Mälzer Limited Edition 20 cm kiritsuke.

    A special edition with a matte brown handle and a 20 cm hammered blade. In addition, the blade is embellished with the exclusive Edition XL logo and Tim Mälzer's autograph. This knife was produced in only 5555 pieces and each one is numbered. As such each knife is a unique collector's item. We are happy and proud to be able to offer these knives to our customers.
    The Kiritsuke is a knife that combines the design and features of a usuba and a Japanese yanagiba. You use the usuba for cutting vegetables and the yanagiba for raw fish, for example when making sashimi. As such the kiritsuke can be used for many different tasks in the kitchen: cutting vegetables, meat and fish. The tanto inverted profile makes the tip very flexible and perfect for precision tasks. However, it also makes it more fragile. The flat blade is perfect for other cutting tasks.
    The knife is sharpened on both sides and is made of VG MAX steel with a hardness of 61 (± 1) HRC and surrounded by 32 layers of Damascus steel. Damascus steel makes each knife unique. The matte handle of this special edition is, like the regular knives in the Tim Mälzer Premier collection, made of walnut wood. A type of wood with an extremely characteristic pattern. And resistant to moisture thanks to resin treatment. The traditional Japanese chestnut shape of the handle is comfortable in the hand and offers a firm grip when using the knife.

    Oggi vi parlerò del Benchmade Puukko 200, un coltello che rappresenta un'interpretazione moderna del tradizionale Puukko finlandese. Insieme andremo a scoprire le caratteristiche e le impressioni su questo coltello.

    La lama in acciaio CPM 3V si è dimostrata sorprendente, mantenendo il filo praticamente inalterato nonostante il lavoro prolungato nel bosco. È un coltello che non perde facilmente il filo, e questo è sicuramente un aspetto positivo per chi lo utilizza per compiti di precisione.
