Il coltello da tavola è spesso il più trascurato nella scelta, ma non ne va sottovalutata l'importanza; deve essere rigorosamente a filo liscio per non sfibrare la carne e non spremerne il gusto, come accade con le lame seghettate. Per assaporare i piatti nel loro pieno sapore, con un taglio dolce e preciso. Non dovrete gettarlo una volta che avrà perso il filo, come succede per le lame seghettate, che non possono essere affilate. Le lame sono ottenute con taglio laser da lastre di acciaio speciale da taglio che consente una altissima qualità della lama (granulometria fne ed ordinata senza la forgiatura). Realizzati a codolo intero, ovvero la lama è un unico pezzo che attraversa tutto il manico, hanno la finitura superficiale della lama sabbiata. Prodotti completamente a mano in piccole quantità. Il trattamento termico prevede anche il raffreddamento a -80 °C per garantire il massimo della capacità e durata del taglio.

After at least six months spent in a marble basin, together with "Secret" aromas, Colonnata lard, cleansed of the rind, sea salt and the aromas that envelop it, releases an immense fragrance that is enhanced by consuming it cut into very thin slices: a thousand-year-old tradition to which we dedicate this box set.
The smaller knife for a twofold function: to separate the lard from the rind by a few centimeters, that is, for the amount of lard you intend to consume, and, on the back side, to clean the lard from the sea salt and aromas that envelop it.

Descrizione dell'articolo a cura dello Chef Knam: Un taglio netto su tutte le paste piene. Ecco in sintesi la funzione di questo coltello, studiato specificamente per tale risultato. Inanzitutto, bagnate la lama con acqua calda, dato che questo tipo di dolci ha quasi sempre la glassa, che tende ad appiccicarsi alla lama. Cio' renderebbe impossibile una perfetta esecuzione del taglio immediatamente successivo sporcando la fetta o addirittura portandola a rimanere attaccata al coltello. La punta inclinata della lama è concepita per entrare per prima nella pasta; inseritela quindi al centro del dolce e a questo primo movimento fate seguire uno schiacciamento verso il basso, con un movimento ad arco di forza moderata. La fetta risulterà ineccepibile. Dolci che possono essere tagliati con questo coltello: Torta Sacher, Torta di Carote, Tutte le torte a pasta Piena.
