    The Les Forgés 1890 knives represent the excellence of the French cutlery tradition. As the name suggests, they are fully forged, distinguishing themselves for their durability, impeccable balance, resistance, and superior cutting quality.

    The Small Chef Knife is extremely versatile. Thanks to its handy size, it's perfect for slicing or chopping herbs and onions, but it's just as effective in cutting fruit and vegetables into slices or cubes. It's also ideal for crushing ingredients like garlic or preparing a scaloppina.

    The X50CrMoV15 steel is a type of stainless steel known for its high corrosion resistance and ensuring a high-quality cut. The blade hardness is 56-57 HRC.

    The full-tang blade extends through the entire handle, ensuring the knife's robustness and balance, thanks to the even distribution of the steel's weight.

    The handle, made of beechwood, comes from sustainably managed forests and is not painted. It has been treated to be water-resistant. Its ergonomic design pays tribute to traditional pocket knives, ensuring a comfortable grip.

    Maintenance

    Proper maintenance prolongs the life of the knife, makes it easier and safer to work with, and reduces wire consumption. Some tips:

    - Take care that knives placed in the dishwasher do not bump into other objects; this could damage the blades.

    - Knives guaranteed for dishwashers that are not immediately washed in the machine should be rinsed under the water faucet to remove the remains of highly corrosive foods (fats, vinegar, fruit juices).

    - Make sure if the knives no longer cut perfectly, to have them ground or sharpened by professionals in the field.
