Wood, simplicity, effectiveness: Opinel has tapped into its roots and expertise to create the Parallèle kitchen knife range. The beechwood handle, robust and soft in the palm of the hand, with simple and softened lines, ensures a comfortable grip and an inimitable touch. The blade profiles have been designed to optimize movement and ensure a perfect cut suitable for any type of food.
Materials:
Blade: Made from full-tang stainless steel, with a hardness of 55-57 HRC. The steel used provides high resistance to corrosion and excellent mechanical performance. The smooth blade has an excellent edge, easily re-sharpenable, maintaining its effectiveness even after use with hard materials like ceramics.
Handle: Beech is the most commonly used wood for Opinel handles. Sourced from French plantations, it is hard, durable, and easy to work with. With a homogeneous appearance, its light color ranges from yellow to pinkish. It is recognizable by the presence of numerous dark streaks. The handle is varnished to be effectively protected from dirt and moisture.

Recommended use: For trimming and deboning meat and poultry. The short, sturdy blade with a thickness of 2.5 mm remains rigid, and the handle guard allows for safe work. Simple and effective, it is the specialist for meat and poultry.

To avoid the formation of rust and oxidation it is also highly recommended, after having dried it well, to protect the blade with a lubricant (eg grease, paraffin, lanolin, vaseline) that creates a protective barrier between the steel and the atmosphere.
