The two ergonomically shaped handles of the single-edged knife ensure safe handling and optimum power transmission. This ensures fatigue-free working. The hardened blade, a rarity in mincing knives, is characterized by a particularly high and long-lasting sharpness.

 Mincing knives are handmade and carefully sharpened in a multi-step process. The final honing is done by hand on the sanding belt. In order to preserve the blade and to preserve the beauty of the wood, it is recommended to clean the knife with care and by hand.

Materials

The body of the molds is made of anodized aluminum to ensure a clean cut of the pastry. The central plate, thanks to a spring mechanism, is designed to evenly press the filling and obtain a perfect hemisphere.

Colors

Marcato stencils are available in Champagne color; the color is achieved through an anodic oxidation process.

The woods

The handles of the molds are made of solid Canadian Walnut wood, with a natural wax finish and laser engraving. They have an ergomonic shape that makes the handle stable and easier to use.

The special finish is made by PVD (Physical Vapor Deposition), a process that deposits a thin metal film above the chrome, providing a spectacular aesthetic effect and surface hardening. It also provides high surface wear resistance to protect our health. The finish-reinforced cut evenly compresses the two dough sheets together, seals them and cuts even with minimal hand pressure.
