Laguiole en Aubrac - Sommelier sabre Lisse Origine Concorde - Sabrage

Sabrage is a special technique for opening champagne bottles with a sabre (sabre in French), usually used as a ceremonial gesture. The sabre is slid along the body of the bottle towards the neck with a sharp blow. The force of the blade striking the lip of the neck is sufficient to break the glass and separate the neck cleanly from the bottle collar which, together with the cork, is shot away by the force of the gas contained in the wine. When applied correctly, the technique is effective with any sparkling wine.

This practice became popular in Napoleonic France when the army visited the aristocratic domains belonging to the empire. The period was just after the French Revolution and the sabre was the weapon of choice for the army's light cavalry, the hussars. Given the numerous victories achieved by the army, there were many celebrations, during which it was customary to open the bottles by a convenient and easily available means. It seems that during one of these celebrations Napoleon himself said 'Champagne! In victory it is a merit; in defeat a necessity', thus encouraging its use and practice.

He was created by CJ Buck (CEO of Buck Knives) and designed a small business, Qual-A-Tec, in 1981 in California. Scimitar "or" French "blade already present in the early twentieth century, production continued until the mid-1950s. The great success of this model, which was born in Scarperia has had national diffusion, is due to the fact that although it is very light it is elegant, robust and has great cutting capacity, due to the guessed shape of the blade. A native of Calabria, this knife by the blade and pointed straight but has a handle in the most typical style of Scarborough, has a seal consists of two rings round, similar to Fiorentino, although smaller. It is supposed to have been in the past a major reworking of the knives typical Calabrian by the craftsmen of Scarperia that as often happened then have been extensively used to their own tradition. This knife owes its name to the blunt tip which is absolutely missing as if the blade had been cut off.
Pointless knives became much more widespread with the "Giolitti law" of 1908 which fixed the length of the blade of pointed knives at only four centimeters.
For mozzette, the limit rose to ten centimeters, offering the possibility of safely carrying a knife of sufficient size in your pocket without risking the rigors of the law.

The "Roman" testifies to the widespread mentality in the Papal States for which the knife was considered as a faithful friend to be constantly worn "in his pocket" and to be unleashed at the first hint of a fight or for an immediate response.

Many elements constituting the "Roman" bear witness to the offensive use that distinguished this knife: the sharp blade, the decorations of the lattice handle or fish bone that served to improve the grip, the locking system with fixed spring that prevented the knife could close up accidentally and that at the time of the opening emitted a dry noise that exalted the aggressive expression.
