A myth in the knife world is that out there somewhere there is a steel with high cutting capabilities that cannot rust.
A Japanese foundry recently turned this myth into reality with the introduction of a steel called H1. H1 is a PH steel, which is a precipitation-processed, hard-rolled alloy with no heat treatment and 0.1 percent nitrogen that acts like carbon in the steel matrix but does not react with chlorine to create rust.
Surprisingly, it maintains a sharp edge comparable to that of the higher quality knife steels used in the industry by most knife manufacturers.
