As is typical for many agricultural tools, this Japanese knife turns out to be extremely simple but the result of centuries of refinement that has found the difficult balance between form and function, and between cost and benefit.
The main feature definitely turns out to be the quality of the blade, in fact it uses a three-layer San Mai steel of which the one in the center is extremely hard.
