    A small and versatile knife with a thin blade and smooth edge: the vegetable / paring knife is made for chopping onions and herbs, but also for chopping, cleaning and decorating fruit and vegetables. With its fine pointed blade, this vegetable knife is also used as a paring knife.

Is a Japanese or European knife better?

Can professional kitchen knives go in the dishwasher?

No, it is strongly discouraged. Aggressive detergents, high temperatures, and impacts damage the edge and the blade surface. It is always preferable to wash knives by hand and dry them immediately after use.
