This type of traditional Japanese knives has been produced for hundreds of years in similar forms. This series fascinates thanks to its satin blade of high-carbon steel with a hardness of about 58HRC. The handle, in the traditional chestnut shape, is made of composite wood, a wood naturally rich in oils and therefore impermeable to water.
