Kiku Matsuda is one of the most famous artists and scholars of sharpening in Japan. The Demko Knives AD20.5 is a high-quality folder offered at a very competitive price. Fun to use and practical for everyday use, it owes much of its appeal to the innovative Shark Lock: a radical system that guarantees a secure blade lock, keeping your fingers safe at all times.The mechanism is activated by pulling back the “fin” with your thumb or index finger, in a movement similar to that of a flipper opener. Once opened, the blade locks securely and the fin becomes a comfortable thumb rest, complete with jimping for superior control. Additional jimping on the back of the blade and an optional high grip further enhance the handling and versatility of this folding knife.
