The blade of a good roast knife must be long, flexible and sharp enough to run smoothly over the meat. But above all the blade must be smooth and not serrated: in this way it is possible to cut the meat easily, without tearing it and without "squeezing it"  thus enhancing the taste.

    Five steps to make a quality product. To make Alexander handcrafted products from steel rods, five careful and long and costly processing phases are required: 

    forged from stainless steel incandescent bars 

    hot coining 

    shearing of the profile and the interior 

    roughing and bending

    tempera.

    The normal finishing operations (mirroring, working of the handle) are added to the aforementioned phases. The knife blades are sharp as they are sharpened by hand.

    Proper maintenance prolongs the life of the knife, makes it easier and safer to work with, and reduces wire consumption. Some tips:

    - Take care that knives placed in the dishwasher do not bump into other objects; this could damage the blades.

    - Knives guaranteed for dishwashers that are not immediately washed in the machine should be rinsed under the water faucet to remove the remains of highly corrosive foods (fats, vinegar, fruit juices).

    - Make sure if the knives no longer cut perfectly, to have them ground or sharpened by professionals in the field.
