    For the trend-setting Shun Premier Tim Mälzer series, Kai has developed six additional knives made from corrosion-resistant 32-layer damask steel.     - Knives guaranteed for dishwashers that are not immediately washed in the machine should be rinsed under the water tap to remove the remains of highly corrosive foods (fats, vinegar, fruit juices).

    - Make sure if the knives no longer cut perfectly, have them rectified or sharpened by professionals in the sector.

Is a Japanese or European knife better?

Japanese knives are harder, with sharpening angles around 15°, ideal for extremely precise but more delicate cuts. European knives (German and Italian) are more robust, easier to resharpen, and more tolerant to impact, perfect for intensive use.

Can professional kitchen knives go in the dishwasher?

No, it is strongly discouraged. Aggressive detergents, high temperatures, and impacts damage the edge and the blade surface. It is always preferable to wash knives by hand and dry them immediately after use.
