Laguiole en Aubrac - Sommelier sabre Lisse Origine Concorde - Sabrage
Laguiole en Aubrac - Sommelier sabre Lisse Origine Concorde - Sabrage
Sabrage is a special technique for opening champagne bottles with a sabre (sabre in French), usually used as a ceremonial gesture. The sabre is slid along the body of the bottle towards the neck with a sharp blow. The force of the blade striking the lip of the neck is sufficient to break the glass and separate the neck cleanly from the bottle collar which, together with the cork, is shot away by the force of the gas contained in the wine. When applied correctly, the technique is effective with any sparkling wine.
This practice became popular in Napoleonic France when the army visited the aristocratic domains belonging to the empire. The period was just after the French Revolution and the sabre was the weapon of choice for the army's light cavalry, the hussars. Given the numerous victories achieved by the army, there were many celebrations, during which it was customary to open the bottles by a convenient and easily available means. It seems that during one of these celebrations Napoleon himself said 'Champagne! In victory it is a merit; in defeat a necessity', thus encouraging its use and practice.

Coltelli - Numero 62 - Febbraio/Marzo 2014 - rivista
Rivista a colori Bimestrale prodotta e distribuita in Italia specializzata in coltelli di tutti i tipi (collezione, artigianali, militari, sportivi, multiuso…). 82 Pagine

Rivista a colori Bimestrale prodotta e distribuita in Italia specializzata in coltelli di tutti i tipi (collezione, artigianali, militari, sportivi, multiuso…). 96 Pagine
Coltelli - Numero 57 - Aprile/Maggio 2013 - rivista
Rivista a colori Bimestrale prodotta e distribuita in Italia specializzata in coltelli di tutti i tipi (collezione, artigianali, militari, sportivi, multiuso…). 96 Pagine
Per quanto riguarda gli eventi, vi parleremo dell’East Cost Custom Show, svoltosi a marzo a New York. Buona fortuna e… buona lettura!coltelli57 -

Laguiole en Aubrac - 3-piece cheese set - guim blanc
Laguiole en Aubrac 3-piece cheese set - guim blanc
The knives by Laguiole en Aubrac combine the long tradition of knife makers in perfect symbiosis with a penchant for perfection, while the price, though, can be measured in worldly standards.
As is for all genuine French Laguiole knives, the traditional shepherds cross in the RESIN GUIM handle, the hand-made engravings on the spine and the bee are a must, including for this cheese set.
It is carefully manufactured by hand and reflects the French tradition and dining culture. Please hand wash (only).

Laguiole En Aubrac - Hunteing knife - Ebony - L0514EBI - knife
These high quality knives, are handcrafted in the tradition of French Thiers cutlery.
This large, perfectly balanced Laguiole hunting knife was made entirely by hand in Laguiole, by a master blacksmith, according to the strict LOG (Laguiole Origine Garantie) quality criteria. Depending on the version, it requires from 109 to 216 working steps.
The blade has a very balanced geometry proven over many decades: it is 11 cm long, 3 cm high and 4 mm thick. Both the bee and the area above the ricasso can be used as a thumb rest.
The blade is ground on both sides to about 22 degrees to the cutting edge (flat grind), so that optimal breaking and scoring is guaranteed and, at the same time, the edge does not round off too quickly.

Rockstead - Shin knife DLC - YXR7 - knife
This knife blade is convex on both sides in the tradition of the highly praised Japanese sword. This shape is both sharp and strong, and can still slice cleanly through a sheet of paper even after the punishment of chopping and cutting through dried bamboo. Using this special blade shape is an excellent way of allowing an edge to be thick without sacrificing any of its sharpness. This knife is of preeminent sharpness. This is a durable knife with strong cutting capabilities that will last for a long time. Even when used for rigorous cutting, the blade will not bite or catch thanks to its convex shape. Other knives will often bite or catch, and may acquire nicks if pulled out suddenly.
