    The internationally awarded forge of Laguiole en Aubrac is a benchmark for traditional French craftsmanship.

    This traditionally designed Laguiole knife bears the LOG (Laguiole Origine Garantie) quality mark, which means that it was made entirely by hand in Laguiole by a master blacksmith in accordance with the strict quality criteria and LOG production specifications. Depending on the version, it requires between 109 and 216 work steps.

    The handle is stabilised by two solid steel hilt bolsters. The left handle bears the traditional shepherd's cross (croix du berger) as decoration. 

    The back spring (with the Maltese cross symbol) was forged from a single piece and decorated by hand. The decoration is the unique 'signature' of the master smith, registered with the Prefecture of Puy-de-Dôme.

    This Pattada constitutes the now historical interpretation of the Sardinian knife made by Consiglio. The handle formed by two halves fixed with a row of rivets and the absence of a real spring are typical of the original model, but the line, the shape of the surfaces, the use of ram's horn are affected by the Scarperian tradition.   31. Laguiole En Aubrac - maple briar - traditional knife

    Laguiole, which can be defined as the "capital" of the Aubrac, is a small town of about 900 inhabitants that became known all over the world for the traditional Laguiole knife.

    The Laguiole knife, also known as a knife-corkscrew, loved by the best sommeliers in the world, is said to have evolved from the one used daily by the people of the region since the fourteenth century. It is said that they received it from their parents on the occasion of the First Communion, and used it with love for life as a friend, and as an "amulet".

    The Laguiole knife refers to an older model called capuchadou, which the Aubrac breeders used every day since the fourteenth century. The farmers brought it with them, hung on their belts and used it to work wood, or to cut bread and cheese. It is said that, at the end of the working day, they put it on the ground, like a cross, to offer their evening prayer.

    The current Laguiole knife, has its prototype in the one designed by Pierre-Jean Calmels, at the beginning of the nineteenth century. At the time, many Catalans lived in this region, used for deforestation or other jobs. They used a clasp knife, a curved blade called a navaja, and Calmels created a beautiful and functional instrument, fusing the traditional navaja and Laguiole knife, heir to the capuchadou. Still today, keeping the tradition, each Laguiole En Aubrac knife is handcrafted by Laguiole's artisans.

    L'estrattore posto nella guardia del coltello a forma di "C" schiacciata serviva per estrarre i bossoli che l'estrattore manuale della doppieta faceva uscire solo per qualche millimetro dal vivo della culatta. Si agganciava il fondello del bossolo all'estrattore del coltello e si tirava con decisione in modo da liberare le canne dai bossoli domestici che spesso avevano un corpo in cartone che, con l'umidità, tendeva a gonfiarsi.
