  7. Wusthof Germany - Performer - Santoku Kitchen 17 cm - 1061231317 - kitchen knife

Black, sharp and unsurpassed, a series with a unique design that meets pure dynamism.
The WÜSTHOF Performer Knife series proves its worth with every use: exceptional quality for very high performance. The ultra-hard blade, coated in diamond-like carbon (DLC) guarantees low friction and perfect sliding of the blade during cutting. The non-slip honeycomb structure of the Hexagon Power Grip guarantees extreme control. This knife will win you over for a lifetime!

The cut of the Performer knives flows through the food with almost no friction. Thanks to the particularly low friction, the non-stick properties of the diamond-like coating and the lotus effect of the black surface, the particles simply roll off the blade. Freshly cut pieces of food, such as slices of an onion, slip away: an ideal situation when speed and precision are required in moments of intense activity in the kitchen.

Thanks to the hydrophobic effect, all liquids flow away, including citrus acids, as well as fats or starches from potatoes.
The DLC was originally employed for the extreme conditions of space travel and motorsports; WÜSTHOF is the first knife manufacturer in the world to use this technology on a fully forged knife.
    USE: vegetables, meat, fish
    FEATURES:

    - Diamond-like carbon coating increases surface hardness to 104 Rockwells
    - Thanks to this coating, the knife glides effortlessly through the food
    - Newly developed Hexagon Power Grip with anti-slip honeycomb structure
    - Forged from a single piece of WÜSTHOF stainless steel
    - Forged in Solingen, Germany
    DIMENSIONS:

    - Blade length 17 cm
    - Total length 30.5 cm
    - Weight: 172 gr.

Diamond-like carbon coated blade for extreme performance.

The diamond-like carbon (DLC) coated blade, being extremely hard and durable, is the highest quality in the knife market. The almost magical black coating increases the surface hardness of WÜSTHOF steel from 58 to a unique 104 Rockwell.

For connoisseurs, this means a significant benefit in terms of performance: its extreme robustness makes it practically immune to adverse external effects and the diamond surface is also extremely heat resistant.

The DLC was originally developed for the extreme conditions of space travel and motorsports; WÜSTHOF is the first knife manufacturer in the world to use this technology on a fully forged knife with holder.

Kitchen Knives FAQ

Is a Japanese or European knife better?

Japanese knives are harder, with sharpening angles around 15°, ideal for extremely precise but more delicate cuts. European knives (German and Italian) are more robust, easier to resharpen, and more tolerant to impact, perfect for intensive use.

Can professional kitchen knives go in the dishwasher?

No, it is strongly discouraged. Aggressive detergents, high temperatures, and impacts damage the edge and the blade surface. It is always preferable to wash knives by hand and dry them immediately after use.
