Printed corzetti (“cruxetti”) appeared in the Middle Ages, during the Renaissance. The noble families of the time apparently ordered their cooks to make a type of pasta bearing their coat of arms, with the aim of reminding their guests of the importance of their family and reaffirming their dominion over the territory. The engravings were usually different. The name derives from the stylised image of a small cross, a crocetta (“cruxetta”), with which one side of these medallions was originally decorated, hence the name “cruxettu”. In eastern Liguria, the word “corzetto” refers to both the wooden mould and the pasta engraved with it.
