  6. Laguiole en Aubrac - 3-piece cheese set - guim blanc

Laguiole en Aubrac 3-piece cheese set - guim blanc

The knives by Laguiole en Aubrac combine the long tradition of knife makers in perfect symbiosis with a penchant for perfection, while the price, though, can be measured in worldly standards.

As is for all genuine French Laguiole knives, the traditional shepherd’s cross in the RESIN GUIM handle, the hand-made engravings on the spine and the bee are a must, including for this cheese set.

It is carefully manufactured by hand and reflects the French tradition and dining culture. Please hand wash (only).

  20. Laguiole En Aubrac - Hunteing knife - Ebony - L0514EBI - knife

These high quality knives, are handcrafted in the tradition of French Thiers cutlery.

This large, perfectly balanced Laguiole hunting knife was made entirely by hand in Laguiole, by a master blacksmith, according to the strict LOG (Laguiole Origine Garantie) quality criteria. Depending on the version, it requires from 109 to 216 working steps.

The blade has a very balanced geometry proven over many decades: it is 11 cm long, 3 cm high and 4 mm thick. Both the bee and the area above the ricasso can be used as a thumb rest.

The blade is ground on both sides to about 22 degrees to the cutting edge (flat grind), so that optimal breaking and scoring is guaranteed and, at the same time, the edge does not round off too quickly.

The handle scales are polished to a high shine with seven different oils and high quality wax pastes on large felt discs.

The left handle bears the traditional shepherd's cross (French: croix du berger) as decoration.

  21. Wander Tactical - Raptor - Satin SanMai CoS & Paracord - PRIVATE COLLECTION - craft knife

Knife withdrawn from a private collection - Limited edition production in Japanese CoS steel in SanMai dating back to 2018 and no longer available - In like new condition, no marks on the blade (never cut, never resharpened) or on the handle. Supplied with handmade Kydex sheath and Wander Tactical certificate - Checked and certified by our in-house Coltelleria Collini laboratory.

In collaboration with Wander Tactical we have decided to propose their new neck knife, the Raptor model, in an exclusive version with a satin blade that uses the famous Japanese San Mai steel produced by Takefu Steel. Specifically we used, for the central plate, the CoS at 61.5HRC (Cobalt Special, mechanically considered 25% higher than the already highly appreciated VG10) and the 420J2 (at 56 HRC) for the two side plates in order to guarantee a very high cutting capacity, but at the same time a remarkable resistance to abrasion, resilience and resistance to oxidation.

    Use: Neck Knife / Collection

As in the ancient Japanese Samurai swords.

The rolled steel - imported into Italy by Collini Steel directly from the Japanese Takefu Steel - is based on the ancient Japanese tradition in the creation of the famous Samurai swords. In fact, as early as 1100 the expert Japanese blacksmiths combined different materials together to give the Katana swords incredible cutting capabilities combined with a resistance and flexibility previously unknown. It is thanks to this revolutionary construction technique that Samurai swords have been preserved to this day, becoming one of the most fascinating objects made by man. Following this tradition applied to modern metallurgy, today we are able to have technologically advanced steels already tested and used in cutlery also by famous brands such as Fallkniven, Cold Steel, Mcusta, Kai, Sog, Zwilling, Rockstead, etc.

Characteristics of San Mai steel: These are different types of metals bonded together to create a composite that encloses and intensifies the strengths of the metals individually taken:

    - Longer life of the cutting edge
thanks to the use of very high quality steels with high carbon content (VG10, CoS, Shiro) or sintered (SPG2), in the heart of the sheet (Core Steel), the blade, once hardened, achieves decidedly hardness and cutting performance higher than those achieved with the use of traditional steels.

    - Greater resilience
built with the principle of Japanese swords, multilayer steel is difficult to break thanks to the toughness of the central steel (Core Steel) and the elasticity of the steel used for the side coating (Stainless Steel).

    - Better corrosion resistance
the steel used for the external layers (Stainless Steel) guarantees the blade a high resistance to corrosion. The combination of the two or more materials used by Takefu Steel generates, at the galvanic level, a structure that improves the corrosion resistance even on the wire.

    - Easy processing even after heat treatment
although steel normally becomes harder after hardening, the lateral steel used in multilayer processing does not lose its softness and allows easy processing, drilling or welding even after heat treatment. For an optimal performance of the blade, cryogenic treatment is recommended.

    - Improvement of the aesthetic result
The knives made with multi-state steel or with a damascus pattern at the end of the processing are aesthetically elegant, refined and highly appreciated by collectors all over the world.

Japanese steel merges with Italian excellence

For this 2019/2020 collaboration, exclusive to Coltelleria Collini, we decided to propose a series of best sellers produced by Wander Tactical. Knives made with the famous San Mai steel produced by the Japanese Takefu Steel. Specifically we have used the carbonaceous V-Toku2 at 62/63HRC for the central plate and the stainless SUS410 for the two external plates, in order to guarantee a very high cutting capacity, penetration and edge holding together with an easy resharpening and maintenance. At the same time the blade has a remarkable resistance to corrosion and an important increase of resilience given by the type of extreme steel and the laminated structure.

the steel used for the external layers (Stainless Steel) guarantees the blade a high resistance to corrosion. The combination of the two or more materials used by Takefu Steel generates, on a galvanic level, a structure that improves corrosion resistance even on the wire.

    - Easy processing even after heat treatment
although the steel normally becomes harder after hardening, the side steel used in multilayer processing does not lose its softness and allows easy processing, drilling or welding even after heat treatment. For an optimal performance of the blade, cryogenic treatment is recommended.

    - Improvement of the aesthetic result
The knives made with multi-state steel or with a damask pattern at the end of the processing are aesthetically elegant, refined and highly appreciated by collectors all over the world.

As in the ancient swords of the Japanese Samurai.

Rolled steel - imported into Italy from Collini Steel directly from the Japanese Takefu Steel - is based on the ancient Japanese tradition in the creation of the famous Samurai swords. Already in 1100 the expert Japanese blacksmiths in fact combined different materials to give the Katana swords incredible cutting capabilities combined with a resistance and flexibility previously unknown. It is thanks to this revolutionary construction technique that the swords from Samurai have been preserved to the present day becoming one of the most fascinating objects made by man. Following this tradition applied to modern metallurgy, we are now able to have technologically advanced steels already tested and used in cutlery also by famous brands such as Fallkniven, Cold Steel, Mcusta, Kai, Sog, Zwilling, Rockstead, etc.

Characteristics of San Mai steel: These are different types of metals bonded together to create a composite that encloses and intensifies the strengths of the metals taken individually:

    - Longer tool life
thanks to the use of high quality steel with a high carbon content (VG10, CoS, Shiro) or sintered (SPG2), in the heart of the sheet (Core Steel), the blade once hardened, achieves hardness and cutting performance decidedly higher than those achieved with the use of traditional steels.

    - Greater resilience
built with the principle of Japanese swords, multilayer steel is difficult to break thanks to the toughness of the central steel (Core Steel) and the elasticity of the steel used for the lateral coating (Stainless Steel).

    - Better corrosion resistance
the steel used for the external layers (Stainless Steel) guarantees the blade a high resistance to corrosion. The combination of the two or more materials used by Takefu Steel generates, at the galvanic level, a structure that improves corrosion resistance even on the wire.

    - Easy processing even after heat treatment
although normally the steel becomes harder after hardening, the lateral steel used in multi-layer processing does not lose its softness and allows easy processing, drilling or welding even after heat treatment. For optimum performance of the blade, cryogenic treatment is recommended.

    - Improvement of the aesthetic result
The knives made with multistate steel or with a damask pattern at the end of the processing are aesthetically elegant, refined and highly appreciated by collectors all over the world.

    Review by Alessandra De Santi

From collector to author of reviews, to designers: the step was short for Claudio Colombo who, in a short time, decided to put his passion and experience to use by designing his own knife, the Kobura.
Inspired by the kiridashi, the Kobura (cobra in Japanese) revisits the essential lines of what was originally a typical Japanese instrument used to carve wood, but also a small daily utility knife used (especially by children) to tip pencils , cut paper, ropes, etc.

The Kobura, an EDC with an aggressive and appealing appearance, is made of D2 steel hardened to 59-61 HRC; the knife is equipped with a short chisel blade (61 mm) and extremely robust (thickness 5.5 mm). On the back there is a practical anti-slip knurling for the thumb. On the side without bevel is the Valknut, a Norse symbol used as the logo of TheFence.

TheFence is a team of shooting instructors with different specialties and experiences. Claudio attended courses with Rob Pincus (of which he is one of the two instructors in Italy), Gabriel Suarez and Scott Reitz (formerly L.A. Swat and instructor); one of the partners is an Active Shooters Response instructor, and another one has deepened Israeli techniques.

  64. Laguiole En Aubrac - Laguiole bovine horn tip 12cm - collection knife

Laguiole, which can be defined as the "capital" of the Aubrac, is a small town of about 900 inhabitants that became known all over the world for the traditional Laguiole knife.

The Laguiole knife, also known as a knife-corkscrew, loved by the best sommeliers in the world, is said to have evolved from the one used daily by the people of the region since the fourteenth century. It is said that they received it from their parents on the occasion of the First Communion, and used it with love for life as a friend, and as an "amulet".

The Laguiole knife refers to an older model called capuchadou, which the Aubrac breeders used every day since the fourteenth century. The farmers brought it with them, hung on their belts and used it to work wood, or to cut bread and cheese. It is said that, at the end of the working day, they put it on the ground, like a cross, to offer their evening prayer.

The current Laguiole knife, has its prototype in the one designed by Pierre-Jean Calmels, at the beginning of the nineteenth century. At the time, many Catalans lived in this region, used for deforestation or other jobs. They used a clasp knife, a curved blade called a navaja, and Calmels created a beautiful and functional instrument, fusing the traditional navaja and Laguiole knife, heir to the capuchadou. Still today, keeping the tradition, each Laguiole En Aubrac knife is handcrafted by Laguiole's artisans.

  65. Laguiole En Aubrac - Fidelis Ebène - regional knife

The "Fidelis" was born from the desire to pay homage to the "medieval Larzac", with its old Templar villages and legends.
It is a knife that symbolizes the roughness of this land, the rusticity of its vegetation and its climate, but also the nobility of women and men who have worked, modeled, guarded and inserted into this object a soul.
Made in Millau, in the heart of Aveyron, in the cutlery workshops "L'ame du Causse", it is worked with noble materials, such as the precious wood of ebony that the Knights Templars have brought back to their return. Its "sage leaf" blade, made of 12C27 steel, renowned for its cutting quality and ease of maintenance, will be a guarantee of longevity. The "Fidelis" will be your ideal companion to share moments of everyday life full of history.
