Berti - Colonnata Set 3 pieces - kitchen
Two knives and a fork for the proper cutting and serving of Lardo di Colonnata.
After at least six months spent in a marble basin, together with "Secret" aromas, Colonnata lard, cleansed of the rind, sea salt and the aromas that envelop it, releases an immense fragrance that is enhanced by consuming it cut into very thin slices: a thousand-year-old tradition to which we dedicate this box set.
The smaller knife for a twofold function: to separate the lard from the rind by a few centimeters, that is, for the amount of lard you intend to consume, and, on the back side, to clean the lard from the sea salt and aromas that envelop it.
The larger knife for cutting very thin slices of lard in such a way as to release its "immense" fragrance that is enhanced precisely with this type of cut. The small fork to lay the resulting slice on a piece of bread, perhaps warm toasted, or lay it on a plate.

The blade is equipped with a central plate in Blue Steel carbon steel coated on the sides with layers of steel, brass and copper plates that help to increase the resistance to oxidation and resilience.
Once again, Master Saji has succeeded in creating an innovative new art style for his knives, combining the traditional "Sakura-Maki" handle and the striking rainbow Damascus blade.
The Petty is a small utility knife used for peeling, shaping, slicing fruit and vegetables, chopping herbs and making side dishes.

The symbolic meaning of love knife, so you call the knife produced specifically to be exchanged between engaged, is twofold: - given to man symbolizes the incitement to the courage, virility, to prevail in the social context - given the woman takes the significance of accepting the commitment to defend their honor and the faith given to the blood. For both finally assume the archaic ritual significance to sanction the signing of a contract not yet institutionalized.
The handle is decorated with classic "dice eyes" that are meant to turn the knife in a valuable amulet against the evil eye. After marriage these knives were usually hung on the wall above the bed.

Uno tra i sedici coltelli e specifici strumenti realizzati artigianalmente dietro collaborazione dello Chef Patissier Ernst Knam necessari per l'efficace lavorazione di cioccolato, frutta, pan di spagna, creme e mousse, per il corretto taglio di torte, crostate e dei dolci di morbida consistenza e per l'adeguato servizio di tutto quanto sopra menzionato e della Petit Patisserie.
Descrizione dell'articolo a cura dello Chef Knam: Un taglio netto su tutte le paste piene. Ecco in sintesi la funzione di questo coltello, studiato specificamente per tale risultato. Inanzitutto, bagnate la lama con acqua calda, dato che questo tipo di dolci ha quasi sempre la glassa, che tende ad appiccicarsi alla lama. Cio' renderebbe impossibile una perfetta esecuzione del taglio immediatamente successivo sporcando la fetta o addirittura portandola a rimanere attaccata al coltello. La punta inclinata della lama è concepita per entrare per prima nella pasta; inseritela quindi al centro del dolce e a questo primo movimento fate seguire uno schiacciamento verso il basso, con un movimento ad arco di forza moderata. Takeshi Saji è nato nel 1948 a Takefu (prefettura di Fukui), una città situata all'incirca nel centro del Giappone e nel cuore di una zona da secoli votata alla produzione di lame. Il suo laboratorio è ancora lì, costruito intorno al forno grazie al quale, ormai da parecchi anni, Takeshi Saji forgia l'acciaio (soprattutto damasco) con cui realizza vari modelli di coltelli tradizionali giapponesi. La scelta dei materiali per le finiture (prevalentemente naturali), le linee essenziali - evocatrici dell'utilizzo - e gli accostamenti cromatici di raro impatto rendono le sue realizzazioni uniche e inconfondibili nel panorama della coltelleria mondiale e, in patria, gli sono valse il prestigioso titolo di Maestro.
